
Juicy, savory, and packed with garlic-Parmesan flavor—this chicken meatloaf is a lighter twist on a comfort classic.
Ingredients
- 1½ lbs ground chicken
- ½ cup grated Parmesan cheese
- ½ cup Italian-style breadcrumbs
- ¼ cup milk
- 2 cloves garlic, minced
- ¼ cup onion, finely chopped
- 1 large egg
- 2 tbsp fresh parsley, chopped (+ extra for garnish)
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp crushed red pepper flakes (optional)
- ¼ cup shredded mozzarella (optional, topping)
- 2 tbsp olive oil
Instructions
1️⃣ Preheat Oven
Preheat to 375°F (190°C). Grease or line a loaf pan with parchment paper.
2️⃣ Mix
In a large bowl, combine ground chicken, Parmesan, breadcrumbs, milk, garlic, onion, egg, parsley, oregano, salt, pepper, and red pepper flakes. Mix until just combined.
3️⃣ Shape
Transfer mixture to the loaf pan and gently press into shape.
4️⃣ Bake
Drizzle olive oil over the top.
Bake 45–50 minutes, until internal temperature reaches 165°F (74°C).
5️⃣ Cheese Topping (Optional)
Add mozzarella during the last 10 minutes of baking and return to oven until melted.
6️⃣ Rest & Serve
Let rest 5 minutes, slice, and garnish with fresh parsley.
