Farmer’s-Style Casserole

Farmer’s-Style Casserole is a comforting, hearty dish inspired by rustic countryside cooking. It combines tender potatoes, savory sausage or bacon, fluffy eggs, and melted cheese into one satisfying bake. Perfect for breakfast, brunch, or even a cozy dinner, this casserole is easy to prepare and ideal for feeding the whole family.

Ingredients:
4 medium potatoes, peeled and diced
1 cup cooked sausage or bacon, chopped
1 small onion, finely chopped
1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella)
6 large eggs
1 cup milk
2 tablespoons olive oil or butter
1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon dried thyme or oregano

Instructions:
Preheat your oven to 180°C (350°F) and lightly grease a baking dish.

Heat the olive oil or butter in a skillet over medium heat. Add the diced potatoes and cook for 8–10 minutes until slightly golden and tender.

Add the chopped onion and cooked sausage or bacon to the skillet. Stir and cook for 2–3 minutes until fragrant.

Spread the potato mixture evenly in the prepared baking dish. Sprinkle the shredded cheese on top.

In a bowl, whisk together the eggs, milk, salt, black pepper, paprika, and dried herbs.

Pour the egg mixture evenly over the casserole.

Bake for 35–40 minutes, or until the eggs are set and the top is golden.

Remove from the oven and let it rest for 5 minutes before serving.
