Ingredients:
3 chicken sausages, sliced
1 tablespoon olive oil
1 red bell pepper, sliced
1 yellow or green bell pepper, sliced
1 small red onion, sliced
1 cup mushrooms, sliced
½ can chopped tomatoes
¼ cup chicken stock
1 teaspoon Italian herbs
2 cloves garlic, minced
Salt and black pepper, to taste
1–2 cups fresh spinach
50 g light mozzarella cheese, shredded
Instructions:
Heat olive oil in a large skillet over medium heat. Add the chicken sausages and pan-fry until golden and cooked through. Remove and set aside.
In the same skillet, add the peppers, red onion, and mushrooms. Sauté for 4–5 minutes until softened.
Stir in the garlic and Italian herbs and cook for 30 seconds until fragrant.
Add the chopped tomatoes and chicken stock. Season with salt and black pepper.
Return the sausages to the skillet and let everything simmer for 8–10 minutes, until the sauce thickens and becomes rich.
Stir in the fresh spinach and cook until just wilted.
Sprinkle the mozzarella over the top, cover the pan, and let it melt.
