The Ultimate Quiche Recipe

Ingredients
For the crust:
1 9-inch pie crust (store-bought or homemade)
1 tablespoon butter (for greasing)
For the filling:
4 large eggs
1 cup heavy cream (or half-and-half)
½ cup whole milk
1 cup shredded cheese (Gruyère, Cheddar, Swiss, or mozzarella)
½ cup cooked fillings (spinach, mushrooms, onions, bell peppers, bacon, or ham)
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon nutmeg (optional)
1 tablespoon olive oil or butter (for sautéing vegetables)

Instructions
Preheat the oven to 375°F (190°C). Lightly grease a 9-inch pie dish and fit the pie crust into it. Trim the edges and prick the bottom with a fork.

Blind bake the crust for 8–10 minutes until lightly set. Remove from the oven and set aside.

Prepare the fillings:
If using vegetables, sauté them in olive oil or butter over medium heat until soft. Cook bacon or ham if needed and let cool slightly.

Make the custard:
In a large bowl, whisk together the eggs, heavy cream, milk, salt, pepper, and nutmeg until smooth.

Assemble the quiche:
Spread the cooked fillings evenly over the crust. Sprinkle the shredded cheese on top. Slowly pour the egg mixture over everything.
Bake for 35–40 minutes, or until the center is just set and the top is lightly golden.

Rest and serve:
Let the quiche rest for 10 minutes before slicing. Serve warm or at room temperature.
