2 cups broccoli florets
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced
1 cup cherry tomatoes (whole or halved)
Tomato Sauce
1½ cups tomato sauce or crushed tomatoes
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon paprika
Salt & black pepper, to taste
Cheese (Optional but Recommended)
1½ cups shredded mozzarella cheese
¼ cup grated Parmesan cheese
Instructions (Step-by-Step)
Preheat the oven to 375°F (190°C).
Prepare the vegetables:
Wash, chop, and arrange all vegetables evenly in a greased baking dish.
Make the sauce:
In a bowl, mix tomato sauce, olive oil, garlic, oregano, basil, paprika, salt, and pepper.
Pour the sauce evenly over the vegetables, making sure everything is well coated.
Cover with foil and bake for 30 minutes.
Remove foil, sprinkle mozzarella and Parmesan cheese on top.
Bake uncovered for another 15–20 minutes, or until the cheese is melted and bubbly.
Optional:
