Ingredients
2 cups mashed potatoes
1 cup shredded cheddar cheese
¼ cup grated Parmesan cheese
2 large eggs
¼ cup all-purpose flour
2 tbsp chopped fresh chives
1 tsp garlic powder
Salt and pepper, to taste

Directions
- Prep the Oven & Muffin Tin
Preheat oven to 400°F (200°C).
Lightly spray a 12-cup muffin tin with non-stick cooking spray.
- Make the Mixture
In a large bowl, combine mashed potatoes, cheddar, Parmesan, eggs, flour, chives, garlic powder, salt, and pepper. Mix until smooth and fully incorporated.
- Fill the Muffin Tin
Spoon the potato mixture into the prepared tin, filling each cup about ¾ full.
- Bake
Bake for 20–25 minutes, until tops are golden brown and crispy.
- Serve
Let cool in the tin for a few minutes before removing. Serve warm, straight from the oven.
