Ribeye Steak Bites and Cheesy Smashed Potatoes


A comforting, hearty meal that brings together juicy, buttery ribeye steak bites and creamy, cheesy smashed potatoes. This dish is perfect for a cozy family dinner or an impressive yet easy weeknight meal. The steak is seared to perfection with garlic and herbs, while the potatoes are rich, fluffy, and loaded with cheese—pure comfort food at its best.

Ingredients
For the Ribeye Steak Bites:
1 lb ribeye steak, cut into bite-sized cubes
Salt and black pepper, to taste
1 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1 tsp fresh rosemary or thyme, chopped (optional)
1 tbsp soy sauce (optional, for extra flavor)
For the Cheesy Smashed Potatoes:
2 lbs baby potatoes or Yukon Gold potatoes
½ cup milk
4 tbsp butter
1 cup shredded cheddar cheese
Salt and pepper, to taste
¼ cup sour cream (optional)
¼ cup green onions or chives, chopped (optional, for garnish)

Instructions

Step 1: Prepare the Potatoes

Place the potatoes in a large pot and cover with cold, salted water.
Bring to a boil and cook for 15–20 minutes, or until fork-tender.
Drain the potatoes and return them to the pot.
Add butter and milk, then smash the potatoes using a potato masher until mostly smooth but still slightly chunky.
Stir in the cheddar cheese and sour cream (if using).
Season with salt and pepper to taste. Cover and keep warm.

Step 2: Cook the Ribeye Steak Bites

Pat the steak cubes dry with paper towels and season generously with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat.
Add the steak bites in a single layer and sear for 2–3 minutes per side until nicely browned. Avoid overcrowding the pan.
Reduce heat to medium and add butter, minced garlic, and rosemary or thyme.
Spoon the melted butter over the steak bites for about 1 minute.
Add soy sauce (if using) and toss quickly to coat. Remove from heat.

Step 3: Serve

Spoon the cheesy smashed potatoes onto plates.
Top with juicy ribeye steak bites.
Garnish with chopped green onions or chives if desired.
