1 pre-made 9-inch pie crust (store-bought or homemade)
2 cups fresh strawberries, hulled and sliced
1 cup granulated sugar
3 tablespoons cornstarch
1 cup water
1 tablespoon lemon juice
Whipped cream (optional, for
serving)
Instructions:
Place the pie crust in a 9-inch pie dish and bake according to package instructions until golden brown. Let it cool completely.
Arrange the sliced strawberries in the cooled pie crust, spreading them evenly.
In a medium saucepan, combine sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear (about 5 to 7 minutes).
Remove from heat and stir in lemon juice. Let the mixture cool slightly for 2 to 3 minutes.
Gently pour the warm glaze over the strawberries in the crust, spreading it evenly with a spoon if needed.
Refrigerate the pie for at least 2 hours, or until the filling is set.
Serve chilled, optionally with a dollop of whipped cream.
