
Ingredients
2 lbs ground beef (or ground turkey)
1 cup diced onion
1 cup diced bell peppers (green or red)
3 cloves garlic, minced
1 (14 oz) can diced tomatoes (no sugar added)
1 (6 oz) can tomato paste (no sugar added)
1 cup beef broth
2 tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
½ tsp cayenne pepper (optional, for heat)
1 tsp salt
½ tsp black pepper
2 tbsp olive oil or avocado oil
Optional Toppings
Shredded cheddar or Mexican-blend cheese
Sour cream
Sliced avocado
Green onions
Jalapeños
Instructions
Cook the Meat & Veggies
Heat oil in a large pot over medium heat.
Add onion, bell peppers, and garlic. Sauté until softened.
Add ground beef and cook until browned. Drain excess grease if needed.
Add Tomatoes & Seasonings
Stir in diced tomatoes, tomato paste, and beef broth.
Add chili powder, cumin, smoked paprika, cayenne (if using), salt, and black pepper.
Simmer
Reduce heat to low and simmer uncovered for 30–40 minutes, stirring occasionally, until thick and flavorful.
Serve
Ladle into bowls and top with cheese, sour cream, avocado, green onions, or jalapeños as desired.
