Ingredients
For the Cherry Filling
4 cups fresh or frozen cherries (pitted)
¾ cup granulated sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
½ teaspoon vanilla extract
¼ teaspoon almond extract (optional)
For the Cobbler Topping
1 cup all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
¼ teaspoon salt
¾ cup milk
½ cup unsalted butter, melted
Preparation Method
Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or similar oven-safe dish.
Prepare the Cherry Filling
In a bowl, mix the cherries, sugar, cornstarch, lemon juice, vanilla extract, and almond extract (if using). Stir well until the cherries are evenly coated. Spread the mixture evenly into the prepared baking dish.
Make the Cobbler Batter
In another bowl, whisk together the flour, sugar, baking powder, and salt. Slowly add the milk and stir until smooth. Pour in the melted butter and mix gently until combined.
Assemble the Cobbler
Pour the batter evenly over the cherry filling. Do not stir—the batter will rise beautifully as it bakes.
Bake
Bake for 45–50 minutes, or until the top is golden brown and the cherry filling is bubbling around the edges.
Cool Slightly & Serve
Let the cobbler cool for 10–15 minutes before serving to allow the filling to set.
Serving Suggestions
Serve warm with vanilla ice cream, whipped cream, or a light dusting of powdered sugar. This cobbler is equally delicious the next day when reheated.
Tips & Variations
Use canned cherries (drained) if fresh are unavailable
