Fruitcake Bars – Easy Christmas Dessert Recipe

Ingredients:

  • 1 cup butter, softened and at room temperature
  • 1 ½ cups light brown sugar, packed
  • 3 large eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 1 pinch salt
  • 1 cup all-purpose flour
  • 1 cup mixed peel
  • 1 cup candied cherries (red and green), quartered or chopped
  • 1 cup candied pineapple, chopped
  • 1 cup dried dates, pitted and chopped

Directions:

  1. Preheat your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Then add the vanilla extract and a pinch of salt.
  4. Gradually mix in the flour until just combined.
  5. Fold in the mixed peel, candied cherries, candied pineapple, and chopped dates until evenly distributed.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the fruitcake bars to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
