Homemade Peppermint Patties


Ingredients:

2 cups powdered sugar
1 1/2 cups unsweetened shredded coconut
2 tablespoons coconut oil, melted
2 teaspoons peppermint extract
1 tablespoon milk (or non-dairy milk)
1/2 lb dark chocolate (about 8 oz), chopped
1 tablespoon coconut oil (for the chocolate coating)
Preparation:

In a medium bowl, combine the powdered sugar, shredded coconut, melted coconut oil, peppermint extract, and milk. Stir until the mixture comes together and is smooth, forming a dough-like consistency.

Scoop out small portions of the mixture and roll them into balls, then flatten each ball into small discs about 1/4 inch thick. You can use your hands or a spoon to shape them.

Place the patties on a parchment-lined baking sheet and refrigerate for 30 minutes to firm up.

While the patties chill, melt the dark chocolate and 1 tablespoon coconut oil in a heatproof bowl over a double boiler or microwave in short intervals, stirring until smooth.

Once the patties are firm, dip each one into the melted chocolate, making sure it’s fully coated. You can use a fork to lift the patties and let excess chocolate drip off before placing them back on the parchment-lined sheet.

Refrigerate the chocolate-coated patties for another 15-20 minutes, or until the chocolate is fully set.

Serve the homemade peppermint patties chilled or at room temperature, and enjoy your refreshing, minty treat!
