Ingredients
Soup Base
1 lb ground beef (or ground turkey/chicken)
2 tbsp olive oil or butter
½ medium onion, diced
2 cloves garlic, minced
1 (10 oz) can diced tomatoes with green chilies (no sugar added)
1 (4 oz) can diced green chilies (optional, for extra heat)
2 cups beef broth (unsalted, no sugar added)
Creamy Finish
4 oz cream cheese, softened
½ cup heavy cream
1½ cups shredded cheddar cheese
Seasonings
2 tsp chili powder
1 tsp cumin
1 tsp paprika
½ tsp oregano
Salt & black pepper, to taste
Toppings (optional)
Shredded cheddar cheese
Sour cream
Chopped cilantro or green onions
Instructions
- Brown the Beef
Heat olive oil or butter in a large pot over medium heat.
Add ground beef and cook until browned.
Drain excess grease if needed.
- Build the Flavor
Stir in onion and garlic; sauté until softened, about 3–4 minutes.
Add chili powder, cumin, paprika, oregano, salt, and pepper.
Cook for 1 minute to bloom the spices.
- Simmer
Add diced tomatoes, green chilies, and beef broth.
Stir well and simmer uncovered for 10 minutes.
- Make It Creamy
Lower heat and stir in cream cheese until fully melted and smooth.
Add heavy cream and shredded cheddar cheese.
Stir until the soup is rich, creamy, and slightly thickened.

Ladle into bowls and top with shredded cheese, sour cream, and fresh herbs.
