Ingredients
For the Filling
2 tablespoons olive oil (30 ml)
1 medium onion, finely diced (150 g)
2 cloves garlic, minced (6 g)
1 cup carrots, diced (130 g)
1 cup celery, diced (100 g)
1 cup potatoes, diced (150 g)
1 cup green peas (150 g)
1 cup mushrooms, chopped (100 g)
3 tablespoons all-purpose flour
2 cups vegetable broth (480 ml)
1 cup unsweetened plant-based milk (240 ml)
1 teaspoon dried thyme
½ teaspoon dried rosemary
Salt and black pepper to taste
For the Golden Veggie Crust
1½ cups mashed potatoes or mashed sweet potatoes
2 tablespoons olive oil
¼ teaspoon turmeric (for color, optional)

Preparation Method
- Prepare the Filling
Heat olive oil in a large pan over medium heat. Add the diced onion and sauté for 3–4 minutes until soft and translucent. Stir in the garlic and cook for another 30 seconds until fragrant.
Add carrots, celery, potatoes, and mushrooms. Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften.
Sprinkle the flour over the vegetables and stir well to coat. Slowly pour in the vegetable broth while stirring to avoid lumps. Add the plant-based milk, thyme, rosemary, salt, and pepper.
Simmer the mixture for 8–10 minutes until the gravy thickens. Stir in the green peas, then remove from heat.
- Assemble the Pot Pie
Preheat the oven to 190°C (375°F). Transfer the vegetable filling into a baking dish and spread it evenly.
In a bowl, mix the mashed potatoes (or sweet potatoes) with olive oil, turmeric, and salt. Spoon the mixture over the filling and spread gently to cover the top.

Bake uncovered for 25–30 minutes, or until the top is golden and slightly crisp. Let the pot pie rest for 5 minutes before serving.
