Ingredients
1 can pumpkin purée
1 tsp pumpkin pie spice
1 packet sugar-free cheesecake pudding mix
2 Tbsp softened cream cheese
8–10 oz Cool Whip (or sugar-free whipped topping)
1 walnut crust (store-bought, e.g. Walmart brand)
Instructions
In a large bowl, combine the pumpkin purée, pumpkin pie spice, pudding mix, softened cream cheese, and Cool Whip.
Whip everything together until smooth, thick, and creamy — about 5 minutes.
Spread the filling into the walnut crust and smooth the top.
Refrigerate until set, or freeze for a firmer, sliceable texture.
Serve chilled, topped with extra whipped cream if you’d like.
