1 lb large shrimp, peeled and deveined
2 tbsp olive oil
1 tbsp Cajun seasoning
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp salt (or to taste)
1/4 tsp black pepper
1 tbsp fresh lemon juice
1 tbsp fresh parsley, chopped (for garnish)
2 tbsp unsalted butter, cut into small pieces
2 lemon slices (for garnish)
Preparation:
Preheat the Oven: Preheat your oven to 400°F (200°C).
Prepare the Shrimp: In a large bowl, toss the peeled and deveined shrimp with olive oil, Cajun seasoning, garlic powder, smoked paprika, onion powder, salt, and black pepper. Mix well to ensure the shrimp are evenly coated.
Prepare the Foil Packets:
Cut 4 large sheets of aluminum foil, each about 12 inches long.
Place the seasoned shrimp in the center of each foil sheet, dividing them evenly.
Add a few small pieces of butter on top of the shrimp, then drizzle each packet with fresh lemon juice.
Seal the Foil Packets: Fold the sides of the foil over the shrimp and crimp the edges to seal the packets tightly, creating a closed pouch.
Bake the Shrimp: Place the foil packets on a baking sheet and bake in the preheated oven for 12-15 minutes, or until the shrimp are cooked through and pink.
Serve: Carefully open the foil packets (be cautious of the hot steam). Garnish the shrimp with fresh parsley and lemon slices. Serve with your favorite side, such as rice or a fresh salad.
