Cheesy Mashed Potato Puffs

Ingredients

2 cups mashed potatoes (fresh or leftover)

2 large eggs

1 cup shredded cheddar cheese

¼ cup grated Parmesan cheese

2 tablespoons butter, melted

2–3 tablespoons milk (if needed for consistency)

2 tablespoons chopped chives or green onions

Salt and black pepper to taste

Non-stick spray or butter (for greasing the muffin pan)

Instructions

  1. Preheat the Oven

Preheat your oven to 400°F (200°C). Lightly grease a mini or regular muffin pan with non-stick spray or butter.

  1. Prepare the Potato Mixture

In a large bowl, combine:

Mashed potatoes

Eggs

Cheddar cheese

Parmesan

Melted butter

Chives

Salt and pepper

Mix until everything is smooth and well combined. If the mixture seems too thick, add a little milk.

  1. Fill the Muffin Pan

Spoon the mixture into the muffin cups, filling each one almost to the top.
For extra crispiness, sprinkle a little Parmesan on each puff.

  1. Bake

Bake for 18–25 minutes, or until the tops are golden brown and slightly crispy.
