1 cup (230 g) butter
½ cup (100 g) brown sugar
1 teaspoon vanilla extract
3 cups (270 g) rolled oats
1 cup (175 g) semisweet chocolate chips
½ cup (125 g) peanut butter
Instructions
- Make the Oat Base
In a saucepan over medium heat, melt the butter.
Add the brown sugar and cook until dissolved.
Stir in the vanilla extract.
Add the rolled oats and cook for 3–4 minutes, stirring constantly until the mixture is well combined.
Remove from heat.
- Prepare the Pan
Line an 8×8 inch (20×20 cm) baking pan with parchment paper.
Press half of the oat mixture firmly into the bottom of the pan.
- Make the Chocolate Filling
In a microwave-safe bowl, add the chocolate chips and peanut butter.
Heat for 30 seconds at a time, stirring in between, until smooth and melted.
- Assemble the Bars
Pour the melted chocolate mixture over the oat layer and spread evenly.
Press the remaining oat mixture on top, gently.
- Chill
Refrigerate for 2–3 hours or until firm.
Slice into bars and serve.
Tips
For a firmer texture, use old-fashioned rolled oats (not quick oats).
Add chopped nuts or shredded coconut for extra flavor.
For a peanut-free version, use almond butter or chocolate spread.
