For the Crust:
1 ½ cups shredded mozzarella cheese
2 tbsp cream cheese
1 cup almond flour (or ¼ cup coconut flour)
1 large egg
½ tsp baking powder (optional, for a softer crust)
½ tsp garlic powder and Italian seasoning (optional)
For the Toppings:
¼ cup sugar-free pizza sauce (like Rao’s or homemade)
1 cup shredded mozzarella
Favorite toppings (pepperoni, bell peppers, mushrooms, sausage, etc.)
Instructions
Preheat oven to 425°F (220°C).
Line a pizza pan or baking sheet with parchment paper.
Make the dough:
In a microwave-safe bowl, combine mozzarella and cream cheese.
Microwave for 1 minute, stir, then another 30 seconds until fully melted and smooth.
Stir in almond flour, egg, and any seasonings.
Mix well until a dough forms (you can knead it with your hands if needed).
Form the crust:
Roll or press the dough into a circle (about ¼ inch thick) on the parchment paper.
Use a fork to poke a few holes to prevent bubbling.
Prebake:
Bake for 8–10 minutes, until lightly golden.
Add toppings:
Spread on the pizza sauce, sprinkle mozzarella, and add your toppings.
Bake again:
Return to the oven for 6–8 minutes, until the cheese is melted and bubbly.
Finish:
Cool slightly, slice into 8 pieces, and enjoy!
