Carrot Cake Cookies: Soft, Spiced & Perfectly Sweet!


These Carrot Cake Cookies capture everything you love about classic carrot cake—warm spices, soft texture, and sweet cream cheese frosting—wrapped into delicious, chewy cookies. They’re easy to make, perfectly spiced, and ideal for holidays, parties, or everyday cravings. If you love carrot cake, these cookies will become your new favorite treat!

Ingredients

For the Cookies:

1 cup (125 g) all-purpose flour

1 cup (90 g) rolled oats

1 ½ teaspoons ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon baking soda

¼ teaspoon salt

½ cup (113 g) unsalted butter, softened

½ cup (100 g) brown sugar

¼ cup (50 g) white sugar

1 large egg

1 teaspoon vanilla extract

1 cup (about 1 large carrot) grated carrots

Optional mix-ins:

½ cup chopped walnuts or pecans

½ cup raisins

½ cup shredded coconut

Cream Cheese Frosting (Optional but AMAZING):

4 oz (113 g) cream cheese, softened

2 tablespoons butter, softened

1 cup powdered sugar

½ teaspoon vanilla extract

Instructions

  1. Prepare the Cookie Dough
  2. In a bowl, whisk together the flour, oats, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, beat the softened butter with the brown sugar and white sugar until creamy and fluffy.
  4. Add the egg and vanilla extract, and mix well.
  5. Stir in the grated carrots.
  6. Add the dry ingredients to the wet mixture and fold gently.

6. If using nuts, raisins, or coconut, fold them in.

  1. Bake the Cookies
  2. Preheat your oven to 350°F (175°C).
  3. Line a baking sheet with parchment paper.
  4. Scoop tablespoon-sized balls of dough onto the baking sheet.
  5. Bake for 10–12 minutes, or until the edges are lightly golden.

5. Allow the cookies to cool completely before frosting.

  1. Make the Cream Cheese Frosting
  2. Beat cream cheese and butter until smooth.
  3. Add powdered sugar and vanilla.
  4. Beat until creamy.
  5. Spread or pipe onto the cooled cookies.
