Chai Latte Cottage Cheese Scones

These cozy, lightly sweet scones are inspired by the warm flavors of a chai latte. Made with cottage cheese for extra moisture and protein, almond flour for a tender crumb, and a blend of cinnamon, ginger, cardamom, and nutmeg, they deliver a perfect balance of spice and richness. They’re naturally low-carb, softly textured, and absolutely delicious with a cup of tea or coffee. With just one bowl and simple ingredients, these scones come together quickly for an easy breakfast or snack.

Ingredients (makes about 8 scones):

1 cup cottage cheese

2 cups almond flour

1/4 cup erythritol

1 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

1/4 tsp ground ginger

1/4 tsp ground cardamom

1/4 tsp ground nutmeg

1/2 tsp vanilla extract

2 large eggs

1/4 cup unsweetened almond milk

1/4 cup chopped walnuts (optional)

Instructions:

  1. Preheat the Oven
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients
    In a large mixing bowl, combine the almond flour, erythritol, baking powder, baking soda, cinnamon, ginger, cardamom, and nutmeg. Stir to evenly distribute the spices.
  3. Blend Wet Ingredients
    In a blender or small bowl, mix the cottage cheese, eggs, vanilla extract, and almond milk until smooth.
  4. Combine Wet and Dry
    Pour the cottage cheese mixture into the dry ingredients. Stir until a thick dough forms. Fold in the chopped walnuts if using.
  5. Shape the Scones
    Transfer the dough to the prepared baking sheet. Shape it into a round disc about 1 inch thick. Use a knife to cut it into 8 triangular wedges.
  6. Bake
    Bake for 18–22 minutes, or until the edges are lightly golden and the center feels set.
  7. Cool and Serve
    Let the scones cool for 10 minutes before separating the wedges. Enjoy warm with tea, coffee, or a drizzle of sugar-free glaze.
