These cozy, lightly sweet scones are inspired by the warm flavors of a chai latte. Made with cottage cheese for extra moisture and protein, almond flour for a tender crumb, and a blend of cinnamon, ginger, cardamom, and nutmeg, they deliver a perfect balance of spice and richness. They’re naturally low-carb, softly textured, and absolutely delicious with a cup of tea or coffee. With just one bowl and simple ingredients, these scones come together quickly for an easy breakfast or snack.
Ingredients (makes about 8 scones):
1 cup cottage cheese
2 cups almond flour
1/4 cup erythritol
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground cardamom
1/4 tsp ground nutmeg
1/2 tsp vanilla extract
2 large eggs
1/4 cup unsweetened almond milk
1/4 cup chopped walnuts (optional)
Instructions:
- Preheat the Oven
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. - Mix Dry Ingredients
In a large mixing bowl, combine the almond flour, erythritol, baking powder, baking soda, cinnamon, ginger, cardamom, and nutmeg. Stir to evenly distribute the spices. - Blend Wet Ingredients
In a blender or small bowl, mix the cottage cheese, eggs, vanilla extract, and almond milk until smooth. - Combine Wet and Dry
Pour the cottage cheese mixture into the dry ingredients. Stir until a thick dough forms. Fold in the chopped walnuts if using. - Shape the Scones
Transfer the dough to the prepared baking sheet. Shape it into a round disc about 1 inch thick. Use a knife to cut it into 8 triangular wedges. - Bake
Bake for 18–22 minutes, or until the edges are lightly golden and the center feels set. - Cool and Serve
Let the scones cool for 10 minutes before separating the wedges. Enjoy warm with tea, coffee, or a drizzle of sugar-free glaze.
