Ingredients
• Fresh strawberries – 2 cups (300g), hulled and chopped
• Sugar – ½ cup (100g)
• Lemon juice – 1 tbsp (15ml)
• Heavy whipping cream (cold) – 2 cups (480ml)
• Sweetened condensed milk – 1 cup (240ml)
• Vanilla extract – 1 tsp (5ml)
Instructions
In a small saucepan, combine the chopped strawberries, sugar, and lemon juice. Cook over medium heat for 8–10 minutes until the strawberries soften and release their juice. Remove from heat and let it cool completely.
Once cooled, blend half of the strawberry mixture into a smooth purée and keep the other half chunky for texture.
In a large mixing bowl, whip the cold heavy cream until soft peaks form.
Gently fold in the sweetened condensed milk and vanilla extract until well combined.
Add the strawberry purée and the chunky strawberry mixture, folding lightly to create swirls.
Pour into a freezer-safe container, smooth the top, and cover with plastic wrap or a lid.
Freeze for at least 6 hours or overnight until firm.
Tips
• For a pinker color, add a few drops of natural beet or strawberry food coloring.
• If you prefer less sweetness, reduce the condensed milk slightly.
• You can also add crushed cookies or chocolate chips for a twist.
