Mac and Cheese Meatloaf Casserole

This Mac and Cheese Meatloaf Casserole is the perfect comfort-food mashup—rich, cheesy, hearty, and incredibly satisfying. Ingredients

For the Meatloaf Layer

1 ½ lbs (700 g) ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 cup breadcrumbs

1 egg

2 tbsp Worcestershire sauce

½ cup ketchup (plus extra for topping, optional)

1 tsp salt

1 tsp black pepper

1 tsp paprika

1 tsp Italian seasoning

For the Mac & Cheese Layer

2 cups dry elbow macaroni

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

2 tbsp butter

2 tbsp flour

2 cups milk

½ tsp garlic powder

½ tsp onion powder

Salt & pepper to taste

Instructions

Step 1: Prepare the Meatloaf Base

Preheat oven to 350°F (175°C).

In a large bowl, mix the ground beef, onion, garlic, breadcrumbs, egg, Worcestershire sauce, ketchup, salt, pepper, paprika, and Italian seasoning.

Press the meat mixture evenly into a greased baking dish (9×13 inch).

Spread a thin layer of ketchup on top if desired.

Bake for 25 minutes.

Step 2: Make the Mac & Cheese

Cook the macaroni according to package instructions; drain and set aside.

In a saucepan, melt the butter and whisk in the flour to form a roux.

Slowly add the milk, stirring until thickened.

Add the cheddar, mozzarella, garlic powder, onion powder, salt, and pepper.

Stir until the cheese melts into a creamy sauce.

Combine the sauce with the cooked macaroni.

Step 3: Assemble & Bake

Remove the meatloaf layer from the oven.

Spread the mac and cheese evenly over the meatloaf.

Bake again for 15–20 minutes, or until bubbly and lightly golden on top.

Let rest for 5–10 minutes before slicing.

Serving Tips

Garnish with chopped parsley or green onions.

Serve with a simple side salad or roasted veggies.

Add extra cheese on top before baking for a crispier crust.
