Strawberry Fluff Dessert

Ingredients

(Makes 4 servings)

For the Strawberry Fluff:

1 cup (240ml) heavy whipping cream

4 oz (113g) cream cheese, softened

½ cup (80g) fresh or frozen strawberries (or 1 packet sugar-free strawberry Jello for a stronger flavor)

3 tbsp powdered erythritol or allulose (adjust to taste)

½ tsp vanilla extract

For Topping:

¼ cup sugar-free whipped cream or extra whipped heavy cream

Instructions

Prep strawberries (if using fresh/frozen):

Blend the strawberries into a puree.

Taste and adjust sweetness with a little erythritol if needed.
(If using sugar-free Jello instead, dissolve it in ¼ cup hot water and let cool to room temp before mixing in.)

Whip the cream:

In a large bowl, beat the heavy whipping cream until stiff peaks form.

Set aside.

Make the cream cheese base:

In another bowl, beat the softened cream cheese, erythritol, and vanilla until smooth and creamy.

Add the strawberry puree (or Jello mixture) and mix well.

Combine:

Gently fold the whipped cream into the strawberry mixture until smooth and fluffy.

Spoon into bowls or cups.

Chill:

Refrigerate for at least 1 hour before serving for best texture.

Top:

Add a dollop of sugar-free whipped cream just before serving.
