Honey-Lemon Herb Chicken:
2 chicken thighs (boneless preferred)
1 tbsp olive oil
1 tbsp honey
1 tbsp lemon juice
2 slices lemon (for topping)
1 tsp garlic powder
1 tsp Italian seasoning
Salt & pepper
Roasted Carrots:
2 cups baby carrots
1 tbsp olive oil
1 tbsp honey or brown sugar
Salt & pepper
Parmesan Broccoli:
2 cups broccoli florets
1 tbsp olive oil
2 tbsp grated Parmesan
Salt & pepper
Optional: 1 tbsp breadcrumbs for extra crunch

Prepare the Chicken
Mix olive oil, honey, lemon juice, garlic powder, Italian seasoning, salt, and pepper.
Coat chicken and marinate 10 minutes.
Sear in a skillet until golden, then top with lemon slices and finish cooking (or oven-bake at 400Β°F / 200Β°C for 15β18 minutes).
Roast the Carrots
Toss baby carrots with oil, honey/brown sugar, salt, and pepper.
Roast at 400Β°F (200Β°C) for 20β25 minutes until caramelized.
Bake the Parmesan Broccoli
Toss broccoli with oil, salt, pepper, and Parmesan.
Roast 12β15 minutes until crispy.
