Slow Cooker Beef Stew with Carrots and Potatoes

Ingredients:

2 lbs beef stew meat, cut into chunks

4 medium potatoes, peeled and diced

4 carrots, peeled and sliced

1 small onion, chopped

3 cloves garlic, minced

3 cups beef broth

2 tbsp tomato paste

1 tsp salt

½ tsp black pepper

1 tsp dried thyme

1 tsp paprika

2 tbsp cornstarch + 2 tbsp water (optional, for thickening)

Directions:

Preheat your slow cooker by setting it to LOW or HIGH depending on your time (LOW for 8 hours, HIGH for 4 hours).

Prep the Ingredients: Add beef, potatoes, carrots, onion, and garlic to the slow cooker.

Add the Flavor: In a small bowl, mix beef broth, tomato paste, salt, pepper, thyme, and paprika. Pour over the beef and veggies.

Slow Cook: Cover and cook on LOW for 8 hours or HIGH for 4 hours until beef is tender and vegetables are soft.

Thicken the Stew (Optional): Mix cornstarch with water, then stir into the stew. Cook on HIGH for another 15–20 minutes until thickened.

Serve: Ladle into bowls and enjoy warm with crusty bread or over rice.
