Ingredients

For the Base:

1 ½ cups digestive biscuits (crushed)

½ cup unsalted butter, melted

For the Cheesecake Layer:

16 oz (450 g) cream cheese, softened

½ cup granulated sugar

1 tsp vanilla extract

1 cup heavy cream

For the Jelly Layer:

1 package (3 oz / 85 g) flavored jelly (your choice)

1 cup boiling water

Directions

  1. Prepare the Base

Mix crushed biscuits with melted butter until evenly combined.

Press the mixture firmly into the bottom of a 9-inch springform pan.

Chill in the fridge for 15 minutes to set.

  1. Make the Cheesecake Layer

In a large bowl, beat softened cream cheese, sugar, and vanilla until smooth and creamy.

In a separate bowl, whip the heavy cream until stiff peaks form.

Gently fold the whipped cream into the cream cheese mixture.

Spread this cheesecake layer evenly over the chilled biscuit base.

Chill in the fridge for at least 30 minutes.

  1. Prepare the Jelly Layer

Dissolve the jelly powder in 1 cup boiling water, stirring until fully dissolved.

Let it cool slightly (do not let it set).

  1. Assemble the Cheesecake

Carefully pour the slightly cooled jelly over the cheesecake layer.

Refrigerate for 2–3 hours, or until the jelly is fully set.

Slice carefully with a sharp knife dipped in hot water for clean cuts.
