Ingredients

1 (3 to 4 lb) pork loin roast

2 tbsp olive oil

4 garlic cloves, minced

1 tsp dried rosemary

1 tsp dried thyme

1 tsp salt

½ tsp black pepper

2 lbs baby potatoes, halved

2 tbsp melted butter

1 tsp garlic powder

1 tbsp fresh parsley, chopped (optional, for garnish)

Directions

  1. Preheat the Oven
    Preheat your oven to 375°F (190°C).
  2. Prepare the Herb Rub
    In a small bowl, mix together:

olive oil

minced garlic

rosemary

thyme

salt

black pepper

  1. Season the Pork
    Rub the mixture all over the pork loin, coating it evenly.
    Let it sit for 10 minutes to absorb the flavors.
