Ingredients
3 eggs, separated
3 oz cream cheese, softened
Pinch of salt
1/2 tsp vinegar
Pinch of baking powder
Instructions
Preheat
Preheat your oven to 300°F.
Separate the Eggs
Divide the egg whites and yolks into two bowls.
Whip the Egg Whites
Add a pinch of salt and the vinegar to the egg whites.
Beat on high with an electric mixer until stiff peaks form and the bowl can be tipped upside down without the whites moving.
Set aside.
Mix Yolks & Cream Cheese
In the second bowl, gently beat the egg yolks with the cream cheese until smooth.
Combine
Carefully fold the whipped egg whites into the yolk mixture, keeping as much air in the batter as possible.
Portion the Batter
Divide the mixture into 6 equal portions.
Spoon into a whoopie pie pan or mound onto a parchment-lined cookie sheet.
Bake
Bake for 20–25 minutes, until lightly golden.
