How to prepare Keto Fathead Rolls

Ingredients

2 oz cream cheese

¾ cup shredded mozzarella

1 egg, beaten

¼ tsp garlic powder

⅓ cup almond flour

2 tsp baking powder

½ cup shredded cheddar cheese

Instructions

Preheat your oven to 425°F.

In a small microwave-safe bowl, combine the cream cheese and mozzarella. Microwave in 20-second intervals, stirring between each, until fully melted and smooth.

In a separate bowl, whisk the egg. Add the almond flour, garlic powder, baking powder, and mix well.

Add the melted cheese mixture to the dry ingredients and egg. Work the dough together—it will be sticky.

Stir in the shredded cheddar.

Transfer the dough onto a piece of plastic wrap. Dust the top lightly with almond flour. Fold the plastic wrap over and gently shape the dough into a ball.

Cover and refrigerate for 30 minutes.

Divide the dough ball into 4 portions. Roll each into a ball, then cut each ball in half—these become the top and bottom buns.

Place cut-side down on parchment paper or a very well-greased baking sheet.

Bake 10–12 minutes, or until golden brown and set.
