I treated myself to a homemade keto birthday cake — super easy to make, perfectly sweet, and totally guilt-free! Who says you have to miss out on birthday fun?

Ingredients:
For the Cake:
2 cups almond flour
½ cup coconut flour
1 tbsp baking powder
½ tsp salt
½ cup melted butter (or coconut oil)
¾ cup granulated keto sweetener (like Swerve or Monkfruit)
5 large eggs
1 tsp pure vanilla extract
½ cup unsweetened almond milk
For the Frosting:
1 cup heavy whipping cream
2 tbsp powdered keto sweetener
1 tsp vanilla extract
For the Topping:
Fresh strawberries, sliced
Directions:
Preheat oven to 350°F (175°C). Line and grease two 8-inch round cake pans.
In a bowl, mix almond flour, coconut flour, baking powder, and salt.
In another bowl, whisk together melted butter, sweetener, eggs, vanilla, and almond milk.
Combine wet and dry ingredients, stirring until smooth.
Divide batter evenly between pans and bake for 25–30 minutes, or until a toothpick comes out clean.
Cool completely before frosting.
Whip heavy cream with powdered sweetener and vanilla until soft peaks form.
Layer the cakes with whipped cream and sliced strawberries between and on top.
Light, fluffy, and perfectly sweet — this keto cake tastes every bit as festive as the real thing!
