Roasted Pork Loin with Garlic Potatoes


Ingredients:

For the Pork Loin:

2–2.5 lb pork loin

2 tbsp olive oil

3 garlic cloves, minced

1 tsp dried rosemary or thyme

1 tsp salt

1/2 tsp black pepper

1 tsp paprika (optional)

For the Garlic Potatoes:

1.5 lbs baby or Yukon Gold potatoes, halved

2 tbsp olive oil

1 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

Fresh parsley (optional for garnish)

Directions:

Preheat
Set oven to 400°F (200°C) and line a large baking dish or sheet pan.

Season the Pork
In a small bowl, mix olive oil, minced garlic, rosemary, salt, pepper, and paprika.
Rub mixture all over the pork loin and place in the center of the pan.

Prepare the Potatoes
Toss potatoes with olive oil, garlic powder, salt, and pepper.
Spread around the pork in a single layer.

Roast
Roast everything together for 40–50 minutes, or until pork reaches 145°F (63°C) and potatoes are golden and tender. Stir potatoes halfway through cooking.

Rest and Serve
Let pork rest for 10 minutes before slicing. Serve with roasted garlic potatoes and garnish with parsley if desired.
