For the Chicken:
2β3 chicken thighs (bone-in or boneless)
1 tbsp olive oil
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried thyme or oregano
Salt & black pepper
For the Potatoes:
2 medium potatoes, cut into chunks
1 tbsp olive oil
1/2 tsp paprika
1/2 tsp dried herbs
Salt & pepper
For the Green Beans:
1 heaping cup fresh green beans
1 tsp olive oil
Salt, pepper, garlic powder

Prep the Chicken
Toss chicken thighs with olive oil, paprika, garlic powder, onion powder, herbs, salt, and pepper.
Let marinate for at least 15 minutes (or overnight).
Roast the Potatoes
Preheat oven to 200Β°C (400Β°F).
Toss potatoes with oil, seasonings, and spread on a baking tray.
Roast for 25β30 minutes, flipping halfway, until crispy and golden.
Cook the Chicken
Option A: Oven β place chicken on a tray and bake for 25β30 minutes until crispy and cooked through.
Option B: Pan-sear β cook 5β7 minutes per side until browned and juicy.
Roast the Green Beans
Toss with a little oil, salt, pepper, and garlic powder.
