Easy Cake Mix Snickerdoodles

Soft, chewy, cinnamon-sugar perfection — and made with a box of cake mix! These cookies are the quickest way to enjoy the classic snickerdoodle flavor without any complicated steps. Perfect for holidays, bake sales, or last-minute treats.

Ingredients

1 box yellow cake mix (15.25 oz / 432 g)

2 large eggs

1/3 cup vegetable oil

1 teaspoon vanilla extract (optional but recommended)

Cinnamon-Sugar Coating

1/4 cup granulated sugar

1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, add cake mix, eggs, oil, and vanilla extract. Mix until a soft dough forms.
  3. In a small bowl, combine sugar and cinnamon.
  4. Scoop dough and roll into small balls (about 1 tablespoon each).
  5. Roll each dough ball in the cinnamon-sugar mixture until fully coated.
  6. Place balls on the baking sheet, leaving space between them.
  7. Bake for 9–11 minutes, or until the edges are set but the centers are still soft.
  8. Let cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack.

Do not overbake — snickerdoodles should stay soft.

For extra flavor, add a pinch of cream of tartar to the dough (optional).

Store in an airtight container for up to 5 days.
