This Breakfast Sausage & Egg Puff Pastry Roll is the perfect way to start your morning! Ingredients
1 sheet puff pastry (thawed)
4 breakfast sausages (cooked)
3 eggs
2 tbsp milk
1/2 tsp salt
1/4 tsp black pepper
1/2 cup shredded cheddar cheese (or any melting cheese)
1 egg (for egg wash)
Optional: chopped green onions or parsley
Preparation
Preheat oven to 375°F / 190°C.
In a bowl, whisk together the 3 eggs, milk, salt, and pepper.
Cook the egg mixture in a pan over medium heat to make soft scrambled eggs (do not overcook, they will cook more in the oven).
Roll out the puff pastry sheet on a lightly floured surface.
Place the cooked sausages in the center of the pastry sheet, lined up in a row.
Add the scrambled eggs over the sausages.
Sprinkle shredded cheese on top.
Fold the pastry over the filling from both sides, pressing the edges to seal. You can also cut small diagonal slits on top for decoration.
Brush the pastry with beaten egg to give it a nice golden color.
Bake in the oven for 25–30 minutes, or until the pastry is puffed and golden brown.
Allow to cool for 5 minutes before slicing and serving. Enjoy warm!

Add sautéed onions or bell peppers for extra flavor.
Replace sausages with turkey, ham, or chicken — delicious variations!
Store leftovers in the fridge and reheat in the air fryer or oven.
