Peanut Butter Chaffle Sandwich Chaffle

Ingredients

1 egg

1 Tbsp heavy cream

1 Tbsp unsweetened cocoa powder

1 Tbsp powdered sweetener

1 tsp coconut flour

½ tsp vanilla extract

¼ tsp baking powder

Peanut Butter Filling

3 Tbsp all-natural peanut butter

2 tsp powdered sweetener

2 Tbsp heavy cream

Instructions

  1. Make the Chaffles

Preheat your mini waffle maker.

In a small bowl, whisk together all chaffle ingredients until smooth.

Pour half the batter onto the center of the waffle iron and cook for 3–5 minutes, or until set and crisp.

Carefully remove the chaffle and repeat with the remaining batter.

Let both chaffles sit for a few minutes—they’ll crisp up as they cool.

  1. Make the Filling

In a bowl, combine the peanut butter, powdered sweetener, and heavy cream.

Mix until smooth and creamy.

  1. Assemble

Spread the peanut butter filling between the two cooled chaffles to create a sandwich.
