Dinner Tonight: Stuffed Sausage & Veggie Bake

Super simple, flavorful, and absolutely delicious!

Ingredients

1 can Hunt’s fire-roasted diced tomatoes

1 yellow onion, sliced

1 green bell pepper, sliced

Generous spoonful of minced garlic

Spicy Italian sausages

Mozzarella cheese (for stuffing)

Salt, pepper, parsley, basil

Instructions

Spread the canned tomatoes evenly across the bottom of a baking dish.

Add the sliced onion and bell pepper, along with minced garlic.

Slice each sausage lengthwise and stuff with mozzarella cheese.

Lay the stuffed sausages on top of the veggie mixture.

Season everything with salt, pepper, parsley, and basil.

Bake at 400°F (or until sizzling) for about 20 minutes, or until the sausages are cooked through and the cheese is bubbly and beginning to brown.

Serving Suggestion

I served mine over cauliflower rice, and it was so good.
