Garlic Parmesan Chicken Meatloaves with Mushroom Sauce

A comforting and flavorful twist on classic meatloaf — juicy ground chicken baked with garlic, Parmesan, and herbs, then topped with a creamy mushroom sauce. Perfect for a cozy family dinner!

Ingredients

For the Meatloaves

1 lb ground chicken

1/2 cup breadcrumbs (preferably panko)

1/4 cup grated Parmesan cheese

1/4 cup milk

1 large egg

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 tsp dried Italian seasoning

Salt and pepper, to taste

1 tbsp olive oil (for sautéing)

For the Mushroom Sauce

1 cup mushrooms, sliced (cremini or white button recommended)

1 tbsp butter

1/2 cup chicken broth

1/4 cup heavy cream

1 tbsp grated Parmesan cheese

1/2 tsp garlic powder

Directions

1️⃣ Prepare the Meatloaves

Preheat your oven to 375°F (190°C).

In a large bowl, mix together ground chicken, breadcrumbs, Parmesan cheese, milk, egg, minced garlic, parsley, Italian seasoning, salt, and pepper.

Shape the mixture into mini oval meatloaves (about 4–6 pieces depending on size).

Heat olive oil in a skillet over medium heat and sauté the meatloaves for 2–3 minutes per side until lightly browned.

Transfer the meatloaves to a baking sheet and bake for 18–20 minutes, or until cooked through.

2️⃣ Make the Creamy Mushroom Sauce

In the same skillet, melt the butter.

Add the sliced mushrooms and sauté for 5 minutes until tender.

Pour in the chicken broth, scraping up any browned bits from the pan.

Add heavy cream, Parmesan, and garlic powder.

Let simmer for 3–4 minutes until the sauce thickens slightly.

3️⃣ Serve

Place the meatloaves on a plate and spoon the creamy mushroom sauce over the top.

Garnish with extra parsley or Parmesan if desired.
