Ingredients

1 large Tomahawk Ribeye steak (2–3 inches thick)

2 tbsp olive oil

2 tsp kosher salt

1 tsp black pepper

1 tsp paprika

1 tsp garlic powder

4–6 garlic cloves, smashed

2–3 fresh rosemary sprigs

For Garlic Herb Butter

4 tbsp unsalted butter, softened

1 tbsp fresh parsley, chopped

1 tsp fresh thyme, chopped

1 clove minced garlic

1 pinch sea salt

Preparation & Cooking Steps

1️⃣ Season the Steak

Pat the steak dry with paper towels.

Rub with olive oil, then season generously with salt, pepper, paprika, and garlic powder.

Let it rest at room temperature for 30–45 minutes.

2️⃣ Sear

Preheat grill or cast-iron pan to high heat.

Sear the steak for 3–4 minutes per side until beautifully caramelized.

3️⃣ Slow Cook to Perfection

Transfer to indirect heat (or into a 120°C / 250°F oven).

Cook until internal temp reaches:

125°F / 51°C — Medium-Rare

135°F / 57°C — Medium

Add garlic cloves and rosemary around the steak while it cooks.

4️⃣ Rest

Remove the steak and rest for 10 minutes to keep all the juices in.

5️⃣ Top with Garlic Herb Butter

Mix butter, parsley, thyme, garlic, and sea salt.

Spread over the hot steak and let it melt beautifully.
