Ingredients
Casserole
2 ½ lbs chicken breast
1 Tbsp fajita seasoning
1 cup salsa
1 large green bell pepper
1 large red bell pepper
1 large orange or yellow bell pepper
1 large onion
1 ½–2 Tbsp olive oil
1 cup shredded cheddar cheese
Homemade Fajita Seasoning
1 Tbsp garlic powder
1 Tbsp onion powder
2 tsp oregano
1 tsp cayenne pepper
¼ cup chili powder
1 ½ tsp paprika
1 tsp black pepper
1 ½ tsp pink Himalayan salt
1 Tbsp cumin
1 Tbsp onion flakes
Blend all seasoning ingredients together and set aside.
Instructions
Prep the Oven & Dish
Preheat oven to 375°F and spray a 9×13 casserole dish with cooking spray.
Assemble the Base
Slice chicken breasts and spread them evenly across the bottom of the dish.
Sprinkle with 1 Tbsp of your fajita seasoning blend.
Layer the Flavor
Spread salsa evenly over the chicken.
Add sliced peppers and onions on top.
Add Oil & Cheese
Drizzle with olive oil.
Sprinkle 1 cup shredded cheddar over the top.
Bake
Bake for 35–40 minutes, or until the chicken is fully cooked and the veggies are tender.
