No-Bake Raffaello Coconut Balls Recipe

Light, creamy, and irresistibly coconut-y — these no-bake Raffaello balls taste just like the famous Ferrero Raffaello chocolates! They are soft on the inside, crispy from the almond center, and coated in delicious coconut flakes. This simple recipe requires no baking and is perfect for parties, holidays, or a quick homemade dessert that everyone will love.

Ingredients

2 cups (200 g) desiccated coconut, divided

1 cup (250 ml) sweetened condensed milk

1 cup (100 g) powdered milk (optional but recommended for flavor)

1 teaspoon vanilla extract

25–30 whole almonds (peeled, roasted or raw)

Extra desiccated coconut for rolling

Instructions

  1. In a mixing bowl, add 1½ cups of desiccated coconut, sweetened condensed milk, powdered milk, and vanilla extract.
  2. Mix well until a soft dough forms.
  3. Cover the bowl and refrigerate for 15–20 minutes to firm up the mixture.
  4. Scoop a small portion of the dough, place one almond in the center, and roll into a smooth ball.
  5. Roll each ball in the remaining desiccated coconut until fully coated.
  6. Arrange the coconut balls on a plate and refrigerate again for 15 minutes to set. Serving & Storage

Serve chilled for best texture.

Store in an airtight container in the refrigerator for up to 1 week.

Freezer-friendly for up to 2 months.

Tips for Best Results

For extra creaminess: add 2 tbsp of mascarpone or cream cheese to the mixture.
