Creamy Scalloped Potatoes with Glazed Chicken Drumsticks & Buttered Veggies

For the Glazed Chicken Drumsticks

2 chicken drumsticks

1 tbsp olive oil

1 tbsp honey or brown sugar

1 tsp soy sauce (optional)

1/2 tsp paprika

1/2 tsp garlic powder

Salt & pepper

For the Scalloped Potatoes

2–3 medium potatoes, thinly sliced

1 tbsp butter

1 tbsp flour

1 cup milk

1/2 cup shredded cheese (cheddar or mozzarella)

Salt & pepper

Pinch of parsley or thyme

For the Vegetables

1 cup mixed carrots & green beans

1 tsp butter

Salt & pepper

Prepare the Chicken

Mix oil, honey/brown sugar, soy sauce, paprika, garlic powder, salt, and pepper.

Coat drumsticks well.

Bake at 400°F (200°C) for 35–40 minutes, turning once until browned and sticky.

Make the Scalloped Potatoes

Melt butter in a pan, whisk in flour to form a roux.

Add milk gradually, whisking until smooth.

Stir in cheese, salt, and pepper.

Layer potato slices in a small baking dish.

Pour sauce over and top with herbs.

Bake at 375°F (190°C) for 35–40 minutes until golden and bubbly.

Cook the Veggies

Steam or boil carrots and green beans for 5–7 minutes.

Toss with butter, salt, and pepper.

Assemble the Plate

Serve 2 glazed drumsticks, a scoop of creamy scalloped potatoes, and buttered vegetables.
