Savory Beef & Sweet Potato Power Bowl with Avocado & Cottage Cheese

For the Beef

1 lb (450g) lean ground beef

1 tbsp olive oil

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1 tbsp soy sauce

Salt & pepper to taste

For the Sweet Potatoes

1 large sweet potato, diced into cubes

1 tbsp olive oil

1 tsp paprika

Β½ tsp chili powder

Salt & pepper to taste

For the Bowl

1 cup cottage cheese

1 avocado, diced

Everything bagel seasoning (optional but delicious)

Drizzle of hot honey or sriracha (optional)

Roast the Sweet Potatoes

Preheat oven to 425Β°F (220Β°C).

Toss sweet potato cubes with olive oil, paprika, chili powder, salt, and pepper.

Spread on a baking sheet and roast 20–25 minutes, flipping halfway.

Cook the Beef

Heat olive oil in a skillet over medium-high heat.

Add ground beef, breaking it apart as it cooks.

Stir in smoked paprika, garlic powder, onion powder, soy sauce, salt, and pepper.

Cook until browned and slightly caramelized, about 7–10 minutes.

Assemble the Bowl

In a large bowl, add a scoop of the cooked beef, roasted sweet potatoes, cottage cheese, and diced avocado.

Sprinkle everything bagel seasoning over the cottage cheese and avocado.

Finish with a drizzle of hot honey or sriracha if desired.
