🛒 Ingredients
4 large eggs
1 cup heavy cream (or fresh cream)
100 g (3.5 oz) goat cheese, crumbled
100 g (3.5 oz) bacon lardons (or chopped smoked bacon)
1 tablespoon butter (for greasing)
Salt and black pepper, to taste
Fresh chives or parsley, chopped (for garnish)
Optional: a pinch of paprika or nutmeg
👨🍳 Instructions
- Preheat the oven to 180°C (350°F).
- Cook the bacon in a pan over medium heat until crispy. Drain excess fat and set aside.
- Grease small oven-safe ramekins with butter.
- Divide the ingredients: Add a spoonful of cream to the bottom of each ramekin, then add bacon and goat cheese.
- Crack one egg into each ramekin without breaking the yolk.
- Add the rest of the cream on top. Season with salt, pepper, and optional paprika or nutmeg.
- Place the ramekins in a baking dish and pour hot water around them until halfway up the sides (bain-marie method).
- Bake for 12–15 minutes, depending on how runny you want the yolk.
- Remove carefully, garnish with chopped herbs, and serve immediately.
