
Missing fried fair food this summer? SAME. And these totally hit that craving — they were that kind of delicious!
Ingredients
For the mixture:
1½ cups steamed broccoli, chopped small
1 egg
1 cup shredded Colby cheese
1 cup shredded cheddar cheese
4 oz Velveeta, cut into chunks
(cream cheese would work as a substitute!)
½ tsp crushed red pepper flakes (optional)
¼ cup almond flour
For frying:
Oil for frying (enough for ~2 inches depth)
For the coating:
1 cup almond flour
2 eggs beaten with 1 tbsp water
1 cup crushed pork rinds
1 cup parmesan cheese powder
Instructions
In a bowl, mix together the cooled broccoli, cheeses, pepper flakes, and ¼ cup almond flour. Combine with a fork until everything is evenly blended.
Scoop the mixture into balls (a medium scoop works great). You should get about 15.
Place the balls on a baking sheet and refrigerate for 30 minutes to firm up.
Heat oil in a pot or deep pan to 350°F (about 2 inches deep).
Set up three shallow bowls:
Bowl 1: almond flour
Bowl 2: beaten eggs + water
Bowl 3: crushed pork rinds mixed with parmesan
Roll each broccoli ball in almond flour, then dip in the egg wash, and finally coat in the pork rind/parmesan mixture.
Carefully place into the hot oil and fry for about 3 minutes, or until golden brown.
Transfer to a paper towel–lined plate to drain.
Serve hot — the melty cheese center is incredible!
