Roasted Pepper & Goat Cheese Sandwich Melt

Ingredients:

4 slices of rustic or sourdough bread


2 roasted red bell peppers (jarred or homemade), sliced


100 g goat cheese (soft and spreadable)


2 tablespoons mayonnaise or butter


1 small handful baby spinach or arugula


1 tablespoon olive oil


1 garlic clove, minced


Salt and freshly ground black pepper, to taste


Optional: drizzle of balsamic glaze

Instructions:

Prepare the Filling:
In a small skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add the roasted peppers, season with salt and pepper, and cook for 2–3 minutes until warmed through.

Assemble the Sandwich:
Spread goat cheese evenly on one side of each bread slice. Top two slices with the warm roasted peppers and a handful of spinach or arugula. Place the remaining slices on top to form sandwiches, goat cheese side down.

Toast the Sandwich:
Spread mayonnaise or butter on the outer sides of each sandwich. Heat a skillet or grill pan over medium heat and toast the sandwiches for 3–4 minutes per side, pressing gently, until golden and crisp and the cheese is slightly melted.

Serve:
Slice in half and serve warm. Drizzle lightly with balsamic glaze if desired for a touch of sweetness.
