1 bone-in prime rib roast (5–6 lbs)
3 tbsp olive oil
1 tbsp kosher salt
1 tbsp black pepper
1 tbsp garlic powder
1 tbsp fresh rosemary, finely chopped
1 tbsp fresh thyme, finely chopped
6 cloves garlic, minced
2 tbsp unsalted butter, softened (optional for finishing)
Preparation Steps
1️⃣ Prepare the Roast
Remove prime rib from the refrigerator and let it sit at room temperature for 1–2 hours. This helps it cook evenly.
2️⃣ Season Generously
In a small bowl, mix: olive oil, salt, black pepper, garlic powder, minced garlic, rosemary and thyme.
Rub the seasoning mixture all over the roast, covering every side.
3️⃣ Start with High Heat
Preheat oven to 450°F (230°C).
Place the roast bone-side down in a roasting pan.
Roast for 20 minutes to create a golden crust.
4️⃣ Lower Temperature
Reduce oven temperature to 325°F (165°C) and continue cooking about 1 hr 30 min – 2 hours, or until:
120°F (49°C) for rare
130°F (54°C) for medium-rare
140°F (60°C) for medium
Always use a meat thermometer for accuracy.
5️⃣ Rest the Meat
