ONE dough FOUR flavors of Cookies

Ingredients:

190 g unsalted cold butter (190g)

135 gms of brown sugar

135 g of white sugar

2 large eggs

2 teaspoons vanilla extract

355 g of all-purpose flour

1 teaspoon baking powder (4g)

1 teaspoon baking soda (4g)

1 teaspoon salt (5g)

Classic Flavor:

1/4 of the dough (330g)

1/3 cup chopped walnuts (40g)

1/3 cup chocolate chips (50g)

Biscoff flavor:

1/4 of the dough (330g)

1/4 cup Biscoff spread (50g)

1/2 cup crushed Biscoff biscuits (60g)

Matcha flavor:

1/4 of the dough (330g)

2 teaspoons matcha powder (8g)

1/3 cup white chocolate chips (50g)

Double Chocolate Flavor:

1/4 of the dough (330g)

2 tablespoons dark cocoa powder (12g)

1/2 cup chocolate chips (75 g)

1/3 cup chopped walnuts (50g).

Preparation:

Buttercream and sugars: In a large bowl, beat the cold butter until soft. Add brown and white sugars, and beat until well mixed.

Add wet ingredients: add eggs one at a time, beating after each addition, then add vanilla extract and mix.

Mix dry ingredients: combine flour, baking powder, baking soda, and salt. Gradually add to the butter mixture until combined.

Grind and make the balls about 110 grams each.

Variations of Flavour:

Classic: Combine 1/4 of the batter with walnuts and chocolate chips.

Biscoff: Mix 1/4 of the batter with Biscoff spread and crushed biscuits.

Matcha: stir in matcha powder and white chocolate chips.

Double Chocolate: Mix cocoa powder, chocolate chips and walnuts in the remaining portion.

Shaped dough: form each serving of dough into balls, about (110g) each. Freeze dough balls for at least 1 hour or overnight.

Baking: Preheat oven to 360°F (180°C). Place balls of dough on a lined baking sheet, separating them at least 2 inches. Baking for 12 minutes.

Serve: Let biscuits cool on baking sheet. Add ingredients while hot if you wish, then serve and enjoy!
