Double Smash Cheeseburger with Caramelized Onions

Ingredients:

For the Burgers:

1 lb ground beef (80/20)

Salt and black pepper, to taste

4 slices American or cheddar cheese

2 brioche burger buns, toasted

1 tablespoon butter or oil for the skillet

For the Caramelized Onions:

2 large onions, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon sugar

1 tablespoon balsamic vinegar

Pinch of salt

Optional Toppings:

Pickles

Lettuce

Ketchup

Mustard

Burger sauce

Directions:

Heat a skillet to medium heat. Add butter and oil, then the sliced onions.

Cook 10 minutes, then add sugar, balsamic vinegar, and salt. Continue cooking 10–12 minutes until deep golden and caramelized.

Heat a cast-iron skillet or flat top over medium-high heat.

Divide ground beef into 4 loose balls (do not compact tightly).

Place beef balls on the hot skillet and smash them firmly using a burger press or heavy spatula.

Season with salt and pepper. Cook 2–3 minutes, flip, and immediately top each patty with cheese.

Cook 1–2 more minutes until cheese melts.

Layer two patties per bun, top with caramelized onions and desired toppings. Serve hot.
