Moist Chocolate Loaf Cake (Super Rich & Fudgy!)

Ingredients

For the Chocolate Loaf

1 cup all-purpose flour

½ cup cocoa powder

1 cup sugar

1 tsp baking soda

½ tsp baking powder

½ tsp salt

1 cup buttermilk (or milk + 1 tbsp vinegar)

½ cup vegetable oil

2 large eggs

1 tsp vanilla extract

½ cup hot water or hot coffee (for extra richness)

For the Chocolate Glaze

1 cup chocolate chips or chopped chocolate

½ cup heavy cream

1 tbsp butter (optional for shine)


👩‍🍳 Instructions

1️⃣ Make the Loaf

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan.
  2. In a bowl, whisk flour, cocoa, sugar, baking soda, baking powder, and salt.
  3. Add buttermilk, oil, eggs, and vanilla. Mix until smooth.
  4. Add hot water (or coffee) and mix gently — batter will be thin, that’s good!
  5. Pour into the loaf pan and bake 45–55 minutes, or until a toothpick comes out clean.
  6. Cool completely before glazing.

2️⃣ Make the Glaze

  1. Heat cream until warm (not boiling).
  2. Pour over chocolate and let sit for 1 minute.
  3. Stir until silky and smooth.
  4. Spread over the cooled loaf and let it set.
